Even though I’m pretty sure most people like the Superbowl just for the parties, lots of people will be entertaining this Sunday! Instead of all the usual greasy snacks and food, why not try a much healthier menu this year? 🙂
Here are 4 items that definitely fit the bill! And if you plan your time, you can achieve all this in about an hour (start with the chili, then make the cupcakes, then the wings, and finally the chips).
Cauliflower and Carrot “Wings” – A quick, simple and delicious way to substitute chicken wings, whether you are vegan or not, these are a great way to eat more vegetables. Very tasty! Ready in about 20-25 minutes!
Paprika and Parmesan Kale Chips (parmesan optional for vegan or dairy-free option)- If you haven’t tried kale chips, you really have to! They are amazing. Really crunchy, and you can’t taste the kale, so pretty much everyone will love them! Ready in about 15 minutes!
Healthy Chili (with or without meat) – There is one sure way to make a chili a heck of a lot healthier: Add a ton of vegetables! I can’t stand chilies that barely have any vegetables in them. So tasteless! So, whether you eat meat or not, just add way more vegetables in it. This chili will obviously taste better with time, but in a hurry, this can be delicious in about 45 minutes!
(If you eat meat, make sure it comes from an organic farm that raises their meat in the fields (grass-fed/pastured), it will not only taste a gazillion times better and provide a humane environment for the animals, but the meat is much healthier for you as well.)
Lemon Vanilla Cupcakes – And for dessert, what about healthy cupcakes that won’t make you feel all bloated and in a sugar coma after? 😉 These cupcakes are really tasty, and can be ready in an hour or so, including some time to cool down in the fridge if you’re in a hurry (it’ll take at least a couple of hours or more otherwise)
Bonus: If you don’t like chili, there’s also the option of making Sweet Potato and Chickpea Burgers, or Raw Tacos with Walnut Meat and Cashew Sour Cream (that would require more prep time though)! Yum!
