The Smoothie Challenge might almost be over on my Facebook page, but boy have I got an awesome healthy smoothie for you today! I figured we should end things in a really kick-ass way, right? So I created this Super Healthy Green Smoothie packed with vegetables. That’s right! Vegetables! Ok, there’s also an apple in there for good measure, but this is a great green smoothie, especially if you’re feeling a bit under the weather, or after a night out. Why is this Super Healthy Green Smoothie so awesome? Because it’s basically like a big salad in a glass, it has romaine lettuce, cucumber and parsley in it, and it tastes refreshing and delicious.

Parsley – More than a garnish
Parsley is often thought of as just a little garnish on the side of the plate at a restaurant that no one eats, but it’s actually an amazing nutritional powerhouse. We should definitely eat it more regularly! I try to sneak some in my salads, in my juices, and now in smoothies too.
Parsley is a natural diuretic, meaning that it helps to eliminate excess fluids in the body, but contrary to some diuretic drugs, it doesn’t deplete our potassium levels. Parsley also helps to protect our liver, balances sugar levels in our blood, and it contains the vitamins A, B, C, K and the minerals iron and potassium. Because of all this, it’s a great food to boost our immune system and protect us from inflammation with its antioxidant properties.
Lettuce has health benefits too!
I’m sure you’re getting used to hear that we should be eating more greens, and people talk about kale a lot, but we sometimes forget about good old lettuce! All varieties of lettuce contain good nutrition, and that’s a good thing because salads are so tasty! They are usually more attainable for people who are just starting to eat more vegetables because their taste is so mild.
Lettuce has a high amount of vitamins A, K, and C, making it also great to boost our immune system and vitamin K is essential to clot our blood properly and also aids in bone health. Not to mention helping our digestive system with its super high fibre content. So, go ahead, add a half romaine lettuce to your smoothie frequently, and boost your vegetable intake up!
And just to make it that much healthier, I added a bit of matcha tea! Oh yeah! It’s actually my 2nd time ever to have matcha tea, and I gotta say, the first time I had some was at a traditional tea ceremony while visiting Japan 11 years ago, and I didn’t like it at all! It’s pretty strong, and I’m not sure I would enjoy of cup of it, but even if you’re like me and don’t like it, now we have another option to still gain from its health benefits by adding a small quantity to our smoothies! We can’t taste it anymore. haha It’s great!

Apples are # 2 on the Dirty Dozen list because they are often heavily sprayed with pesticides and other synthetic chemicals, so in order to reduce your exposure to these toxins, it’s best to always buy organically grown apples and wash them. If you eat a non-organic apple, always peel it first and wash your hands.
Super Healthy Green Smoothie
Makes 2-3 large servings
- 1/2 romaine lettuce, washed (preferably organic)
- 1/4 English cucumber, washed (preferably organic)
- a big handful of parsley, washed
- 1-2 organic apples, washed, core removed
- 1/2 avocado
- 1/2 lemon, peeled
- 2-3 Tbsp raw honey (or maple syrup)
- 1 Tbsp hemp seeds
- 1 tsp chia seeds
- 1/4 – 1/2 tsp matcha tea
- 1 1/2 cup filtered water
- 1-2 ice cubes (optional)
Blend everything in a high performance blender until smooth, about 30-45 seconds. Enjoy right away!
