Today’s recipe is a Healthy Key Lime Pie Smoothie, and it’s gonna knock your socks off! You don’t need to add sugar to make a delicious smoothie!

Coconut
You might’ve heard good and bad things about coconut over the years, but my point of view is that although coconut does have many health benefits, I think it’s important to eat a variety of foods, so I enjoy coconut products, but not just that. 😉
Coconuts are rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous, making them very nutritious.
This healthy key lime pie smoothie will start your day with a nice dose of nutrition!
What about fat?
Too many people worry about fat, but not all fats are created equal. Trans fat is the bad one we want to avoid at all cost. Why? Because that is a fat that doesn’t exist in nature, it’s a chemical reaction that happens in junk/ultra processed foods.
All the other fats are actually needed for us to live healthily. Many functions in our body wouldn’t happen without good fats, like our brain!
Coconuts contain significant amounts of fat, but unlike other nuts, they provide fat that is mostly in the form of medium chain saturated fatty acids (MCFAs) in particular, one called lauric acid. Lauric acid is converted in the body into a highly beneficial compound called monolaurin, an antiviral and antibacterial that destroys a wide variety of disease causing organisms. It is therefore now thought that consumption of coconut milk may help protect the body from infections and viruses. (source)
So why drink the same stuff all the time? Give coconut milk a shot on occasion, try to look for BPA-free cans. On top of enjoying coconut benefits, this smoothie also contains greens, and pineapple, which contains natural enzymes that’ll give your digestive system a little boost 😉

Healthy Key Lime Pie Smoothie
makes 2-3 portions
- 1/2 can coconut milk (approx. 200 ml/7 oz) OR 3 Tbsp shredded coconut + 1 1/2 cup filtered water
- 1 organic lime, juice + zest (because we’re using the zest in this recipe, it is important to only use organic, and wash it first)
- 1 big handful organic baby spinach
- 1/2 avocado OR 1/2 banana
- 3-4 dates OR 2 Tbsp maple syrup
- 1 Tbsp hemp seeds
- 1 thick slice pineapple (1/2 – 1″ thick)
- 1-2 ice cubes (optional)
Blend everything in a high powered blender, add a bit of extra water if it’s too thick.

You keep drawing me in with these delicious sounding smoothies! Seriously, normally I don’t give smoothie recipes a whole lot of attention (I tend to be a ‘throw it all in the blender and hope it tastes good’ kind of guy). But I LOVE key lime pie, and I love the flavours you’ve got going on here. And hey, if I can have my key lime flavours with a nice kick of greens… well that sounds just about perfect. Cheers.

I totally get it! I’ve been that person too for many years, which is partly why I decided to create this challenge. I figured there’s gotta be more to smoothies than the usual, right? They are also more visually attractive when there’s a plan, otherwise all of my old smoothies always ended-up looking brown. haha You’ve got to give one of these a try, it’s such a breeze to make in a vitamix! 😉

First off, I adore key lime pie and coconut so I’m thinking this recipe is perfect for me! Adding the spinach is such a good call – great for colour and extra veg is never a bad idea. Love all your smoothie ideas.
