It’s Monday! How was your weekend? Mine was uneventful, except we got a fairly big snowstorm, over 2 feet in less than 24 hours!I tried to run errands on Saturday, but the roads were so slippery, I was only able to accomplish half of them and then slowly made my way back home without sliding into another car! Needless to say we didn’t get out of the house for the rest of the weekend. haha Sunday was a total snow day. It’s nice sometimes to be forced into staying home and relax, isn’t it?
On that note, here’s a super easy recipe for you today: 10 min gourmet grilled-cheese with apples and cranberries. Just remember that the quality of your ingredients will make this grilled-cheese a healthy one or not! A cheap slice of processed “cheese” is NOT a healthy choice. Two slices of processed white bread and margarine are NOT healthy options. Go for REAL food, made with real ingredients, and of course, organic and local is always best 🙂
As you may already know, I love a good grilled-cheese in the winter! Yummy! So, here’s a quick recipe, I’ve made mine using Emmental (Swiss) cheese, but I also made a vegan one for my husband using Daiya cheese; both work. I served mine with my delicious Kaleslaw salad!

Gourmet grilled-cheese for one
- 1 organic apple, peeled and sliced
- 2 slices organic bread of your choice
- organic grated cheese, like Emmental (Swiss), or Daiya cheese (vegan, dairy-free, soy-free)
- 1 tsp dried cranberries
- 1 tsp raw unsalted pecans (optional)
- organic butter (or buttery spread for vegan/dairy-free, you could even use a bit of good quality olive oil alternatively)
In a large pan over medium heat, put the first slice of bread face-down, so that the butter/spread is down on the pan, then add the cheese on top, the apple slices, the cranberries, and pecans, if using.
Add the 2nd slice of bread on top, face up so that the butter/spread is on the outside. Reduce the heat a bit so that it doesn’t burn. Put a lid on top to help melt the cheese.
Have a look at it every minute or two to make sure it’s not burning.
Once it’s grilled to your liking, flip the sandwich over to grill the other side.
Serve with a large green salad. Yummy!
