Vegan Apple Blueberry Crumble | Gluten-Free

This healthy and delicious recipe for an apple blueberry crumble is simple to make, naturally gluten-free and vegan, with very little sugar.

Ingredients

Filling

  • 4 organic apples peeled and sliced
  • 2 pints local blueberries organic or wild, washed
  • 1/3 cup maple syrup
  • 2 Tbsp organic corn starch
  • 1 organic lemon zested

Topping

  • 1.5 cups rolled oats for celiacs, look for GF certified
  • 1/2 cup raw pecans coarsely chopped
  • 1/4 cup coconut sugar or unbleached organic sugar
  • 1/2 tsp sea salt
  • 1/8 tsp cinnamon powder
  • 1/4 cup coconut oil melted

Instructions

  1. Put 1 cup of the rolled oats through your food processor or blender until coarsely chopped.

  2. In a large baking tray (mine was 11" x 9"), add the apple slices and the blueberries, then mix in the maple syrup and cornstarch. 

    Sprinkle the organic lemon zest on top.

  3. In a medium mixing bowl, mix all of the topping ingredients. Pour the mixture evenly over the fruits in the baking tray.

  4. Bake in a 350F oven, for about 40-45 minutes, or until lightly golden on top.

    Remove from oven and let cool at least 10 minutes before serving.

Recipe Notes

Serve with whipped cream of your choice or ice cream, for an added treat.
