This simple recipe for this Vegan Apple Blueberry Crumble will be great at any BBQs or parties, or simply for a relaxed weekend dessert treat (or breakfast!). Enjoy all that summer has to offer when fruits are in season with a delicious, simple, and healthy crumble.
Healthy Crumble
This recipe is seriously so easy to make, and only uses real ingredients. Feel free to add more pecans if you’d like it more crunchy. It’s also a great way to use those apples you might have on a bowl lying around in the kitchen that are past their freshness prime!
Blueberries, especially when local and naturally grown without chemicals, are not only delicious, but they pack a punch when it comes to the healthy benefits since they contain lots of natural antioxidants. These help our body to better defend itself against free radicals that develop due to a wide variety of issues, like environmental pollution and aging. Free radicals can age you faster than normal, it can affect your heart health, but can also degenerate and transform into cancers later, so it’s important to make sure we eat good fruits and vegetables that help our body defend itself.
Blueberries have also shown benefits in helping our brains and memory function better, it helps our skin, and because they have a low glycemic index, they can help maintain a healthy weight and their high fibre content is helpful to our digestive system as well. What a beautiful little jewel!
As always, you want to look for locally grown wild or organic berries, in order to further minimize your exposure to potentially dangerous chemicals. Every little bits help your health in the long run.
Serve hot or cold
This crumble tastes just as delicious hot with a scoop of vanilla ice cream of your choice, as it does cold for breakfast the next morning! Not that I would know anything about it…. 😉

Vegan Apple Blueberry Crumble | Gluten-Free
This healthy and delicious recipe for an apple blueberry crumble is simple to make, naturally gluten-free and vegan, with very little sugar.
Ingredients
Filling
- 4 organic apples peeled and sliced
- 2 pints local blueberries organic or wild, washed
- 1/3 cup maple syrup
- 2 Tbsp organic corn starch
- 1 organic lemon zested
Topping
- 1.5 cups rolled oats for celiacs, look for GF certified
- 1/2 cup raw pecans coarsely chopped
- 1/4 cup coconut sugar or unbleached organic sugar
- 1/2 tsp sea salt
- 1/8 tsp cinnamon powder
- 1/4 cup coconut oil melted
Instructions
Put 1 cup of the rolled oats through your food processor or blender until coarsely chopped.
In a large baking tray (mine was 11" x 9"), add the apple slices and the blueberries, then mix in the maple syrup and cornstarch.
Sprinkle the organic lemon zest on top.
In a medium mixing bowl, mix all of the topping ingredients. Pour the mixture evenly over the fruits in the baking tray.
Bake in a 350F oven, for about 40-45 minutes, or until lightly golden on top.
Remove from oven and let cool at least 10 minutes before serving.
Recipe Notes
Serve with whipped cream of your choice or ice cream, for an added treat.

Beautiful recipe! I will not that since you have tagged it as being gluten-free, it would be best to identify what kind of oats are actually gluten-free, lest a reader think all oats are gluten-free (which they are not). I have an article which explains further, but suffice to say they should be oats that are both grown using a purity protocol and certified gluten-free. Oh my goodness, those juicy blueberries! We will soon have BC blueberries, and I always buy 10 -20 pounds of organic ones to freeze for smoothies, etc over the winter. This recipe would be perfect when the fresh apples show up this fall. And I love the pecans in there!
