Tomatoes are in season, and if you like them as much as I do, what better way to enjoy these delicious pockets of exploding flavour than a simple salad? For this to be good, you MUST use various tomatoes that are in season, from local organic farmers (or your garden!). Mine were a mix of my own and some from the Farmers’ Market (all organic, of course).
The more colours, the better! Large ones, small ones, teeny-tiny ones, cherry, pears, red, yellow, orange, purple, black, stripped, green… you name it!
Simply slice and cut the tomatoes in any shape you’d like, depending on the size of it. Slices, chunks and halves of smaller ones are ideal.
Arrange everything in a large bowl or plate (depending on how many people you’ll be feeding), be generous with the amount of tomatoes, sprinkle a pinch of unrefined grey sea salt on top, drizzle with good quality organic extra-virgin cold-pressed olive oil and some good quality organic balsamic vinegar. You want everyone to have a large portion of it.

That’s it! How simple and easy is that? Imagine this served with some freshly baked bread and yummy French cheeses or organic pâté or rillettes, and a few slices of prosciutto or saucisson sec.
MMMmmmm……. a true European lunch on a warm summer day. Love it! In fact… I think I might go and eat that right now. 😉
