Hi! So I shared a sneak peek picture of this on my Instagram account last week, and here is the recipe for this delicious Peach and Blackberry Cashew Ice Cream! Sadly for me, peach season seems to be over now, but it’s still going for a lot of you, so enjoy! This recipe is made in just a few minutes, however it takes a while to freeze enough to be able to handle it like ice cream. (the tricky part: if it’s frozen too hard, you’ll need to let it rest on the counter for a bit to soften. The best part: even if it’s not the perfect ice cream texture, it’ll taste just as yummy).
Just a side note, peaches and berries are some of the most sprayed fruits, so I’d recommend getting organic peaches or nectarines in order to dramatically reduce your exposure to pesticides, herbicides and insecticides.
Even if peach season is over, the beauty of this recipe is that you can use whatever fruits you have at that time. Plums would be great, strawberries, raspberries, etc.

Peach and Blackberry Cashew Ice Cream (vegan, no white sugar)
Feel free to mix the peach mixture with the blackberry mixture however you want. Blend it, swirl it, either way, it's good!
Ingredients
Peach Ice Cream
- 1 cup raw cashews soaked for 4 hours (or overnight)
- 3 organic peaches peeled and stones removed
- 2 Tbsp maple syrup
Blackberry Sauce
- 1/2 cup organic blackberries
- 2 Tbsp maple syrup
- 1 Tbsp water (filtered)
Instructions
- Put the soaked cashews with the chunks of peaches and maple syrup in a high powered blender, and blend until super smooth. Transfer to the container you want to use in the freezer. Don't worry about getting it all out at the bottom of the blender, it'll be used in the next step.
- Put the blackberries in the blender, with the leftover ice cream and cashew mixture, the water and maple syrup. Blend until smooth.
- Pour on top of the peach mixture and mix it if you wish, or swirl (it's easier to swirl if you use a larger container).
- Put in the freezer for at least 4-5 hours (or more if it needs to).
- Enjoy!

Creme glacee aux noix de cajou à la pêche et aux mûres (vegetalien, paleo, sans sucre blanc)

Ingredients
- 1 Tasse noix de cajou trempées pendant 4 heures, ou toute la nuit
- 2-3 grosses pêches biologiques épluchées et sans les noyaux
- 2 c. à s. sirop d'érable
Sauce aux mûres
- 2 grosses poignées de mûres
- 2 c. à s. sirop d'érable
- 1 c. à s. eau filtrée
Instructions
- Mettre les noix, le sirop et les morceaux de pêches dans un mélangeur à haute vitesse et pulvériser jusqu'à ce que la consistence soit homogène et sans grumeaux.
- Verser dans un contenant pour aller au congélateur. Ne vous préoccupez pas de bien le nettoyer car cela sera utile pour la prochaine étape.
- Mettez les mûres, le sirop et l'eau dans le mélangeur avec les restants de la mixture aux pêches et mélangez encore une fois jusqu'à une belle texture homogène.
- Versez cette mixture sur celle aux pêches et à vous de jugez si vous voulez la mélanger complètement ou juste vite fait pour faire un petit design.
- Mettez au congélateur pendant 4 à 5 heures (ou plus si besoin). Si cela est trop gelé plus tard, laissez se réchauffer un peu sur le comptoir avant de servir.

Thank you! Not really, cashews have a fairly neutral taste, which makes it great for various dishes 🙂

how can i avoid using maple syrup? i dont want to add any form of sugar.
you can simply not add any, although maple syrup is not a refined sugar like white sugar and the quantity is very minimal. All food contain natural sugars (our brain cannot function without glucose), but feel free to not use maple syrup if you wish. It won’t change the recipe. 🙂

For sure! Most sweeteners are there mostly for taste and won’t affect the recipe. Baking recipes could be affected a little bit because it could be more dry or more wet depending on the sweetener, but it most likely would be fine too. Enjoy!
