Are you always on the lookout for healthier versions of classic treats and desserts? Who wouldn’t, right? I strongly believe that living a healthy lifestyle involves enjoying our lives, and counting calories shouldn’t be part of it, as long as you eat in moderation and use whole foods. This Healthy No Bake Chocolate Hazelnut Fudge Oatmeal Bar recipe couldn’t be any easier to make, and will definitely be enjoyed guilt-free.
No Bake Healthy Treat
It takes about 5 minutes to make and you only require 1 pot! No mixing bowls or anything. I haven’t really changed her recipe, it’s pretty much the same. The original calls for honey, so if you are a strict vegan, I recommend switching for maple syrup, which I have done (mostly because I’m such a big fan of maple syrup – I am Canadian after all, and I come from the land of maple syrup – Quebec! haha) and it was just as yummy as the first one I made with honey. My preferred combination is half honey, half maple syrup. Yum! But for a fully vegan version, only use maple syrup.
I also made a batch where I substituted the baking chocolate for cocoa powder, and that works too.
Chocolate can be healthy, it’s a great source of magnesium, which is needed for our muscles and our cardiovascular health. These bars are also made without any refined white sugar, and that is always a good thing, since too much sugar can create many imbalances in the body, including lowering our immune system for several hours, and could result in future illnesses and diseases.
Another healthy benefit of these bars is that they contain some coconut oil, which is a healthy oil to eat moderately. Our bodies need fat to function and absorb nutrients from certain food, so eating a fat-free diet is never a good idea! You just have to choose the right kind of fats to eat!
I made it about 6-7 times already, and I’m seriously considering making another batch soon! So, so, so yummy and easy! Just remember to keep these in the fridge at all times, since they can melt easily.

Healthy No Bake Chocolate Hazelnut Fudge Oatmeal Bar | Vegan | Gluten-Free | Refined Sugar-Free
Please allow time in the fridge before eating!
- 100 g organic baking chocolate cut in pieces
- 1/4 cup organic raw honey use maple syrup for the vegan version
- 1/4 cup maple syrup
- 3/4 cup hazelnut butter or almond butter
- 1 Tbsp pure organic vanilla extract
- 1/4 cup unrefined coconut oil
- 1 cup shredded coconut
- 2 cups rolled oat flakes for celiacs, use a certified GF variety
Melt chocolate pieces at medium-low temperature (or a bit lower) in a medium-size pot. Once melted, turn off the heat, and gently mix the honey in (if using) with a whisk. Mix in the maple syrup and the vanilla, then add the hazelnut butter and mix everything in.
Finally mix in the coconut oil.
Remove from heat and mix in the shredded coconut, and then the oat flakes. Stir until well combined.
Pour into a parchment lined container or small cookie sheet with edges (mine was 9" x 13"), flatten the top, and pop into the fridge for at least a couple of hours.
- Cut into squares and store in the fridge in an airtight container.
Note: I do not believe anyone should worry about counting calories, but here is the nutritional information for one serving
