Looking for a quick meal idea? These are super quick and easy to make, but very tasty, especially with the dipping sauce. When served on top of plain lettuce leaves, it adds a delicious crunch and a fresh dimension (similar to a Vietnamese roll served wrapped in fresh lettuce and mint). Yum!
My husband and I are not big fans of fish, but I try to find creative ways to incorporate it into our diet and this one was a good way to do it, we ate everything!
Make the sauce first to give flavours enough time to develop and mix.
Steamed broccoli is a perfect accompaniment to this dish. It contains magnesium, a smooth-muscle relaxant, aiding circulation and reducing blood pressure (particularly the diastolic component). Foods rich in magnesium include other vegetables high in chlorophyll, such as leafy greens, as well as kelp, almonds, beans (black, white, and soy), and halibut. Magnesium deficiency is the commonest in the Western world. Anyone who is stressed needs more magnesium-rich foods, because the adrenal glands will use up large amounts, leaving less for other organ systems, such as the heart.

Dipping Sauce
- 1 1/2 organic limes, juiced, freshly squeezed
- 2 Tbsp organic cucumber, chopped (tiny cubes)
- 1/2 tsp organic chili flakes
- 1 tsp fresh organic ginger, minced
- 1 Tbsp maple syrup
- 1 Tbsp organic unrefined raw apple cider vinegar
- 1 Tbsp low-sodium organic tamari sauce (or soy sauce)
- 2 Tbsp chopped fresh organic cilantro
Simply mix all the ingredients in a small bowl and set aside.
Fishcakes
- 1 organic garlic clove
- 2 Tbsp chopped fresh organic cilantro
- 1/2 tsp organic chili flakes
- 1/2 freshly squeezed organic lime
- 2 Tbsp chopped organic green onions (scallions)
- 3 cans sustainably wild-caught salmon (no salt added) I use this awesome brand
- a pinch of unrefined grey sea salt & freshly ground organic pepper
- 2 Tbsp organic chickpea flour
- high quality extra-virgin organic cooking olive oil
In a large bowl, mix all the ingredients, except the flour and the olive oil, then add the flour and mix until completely blended. If you have time, you can make the fishcakes and put in a plate to set in the fridge for at least 30 minutes, otherwise, you can cook them right away, in a large pan, warmed on medium heat, with olive oil. Cook about 3-4 minutes per side or until golden brown.
Serve hot on top of fresh organic lettuce leaves and fresh organic cilantro, with dipping sauce. Enjoy!
